How to Prepare Chairo

Chairo is prepared in each region with the same characteristics, they use various vegetables, among other ingredients, but what is tried to preserve as a recipe are the meats, such as beef, lamb, chalona or cecina.

Ingredients
- 5 black chuños
- 1/2 kg of ossobuco
- 100 grams jerky
- 1/4 kilotripes of lamb
- 4 lamb loins
- 3 oil tablespoons
- 1/2 cup chopped onion
- 1/2 teaspoon ground garlic
- 1 tsp panca chili
- 1/2 cup of carrot chopped in medium cubes
- 1/2 kg of white potato cut into cubes
- 1 cup of cooked mote
- 1/2cup of green beans
- 1 teaspoon minced oregano
- 1 teaspoon minced peppermint
- 3 slices of hot pepper
- Salt, pepper and cumin to taste
Method
- To begin with, soak the chuño in advance, leave it overnight.
- Pour two liters of salted water into a saucepan over medium, moderate heat. As soon as it starts to boil, add the ossobuco, cecina, and tripe. To this add the lamb loins and let them cook for approximately eight minutes.
- After eight minutes, reserve the broth and cut the lamb loins into slices, the guts into cylinders and the cecina into cubes.
- Put the oil in a pot and brown the onion, garlic and panca pepper for a few minutes.
- Pour the reserved broth and when it is boiling, add the carrot, the chuño, the potato, the mote and the beans.
- Season with salt, pepper and cumin, oregano and mint. Cook this for 20 minutes.
- Finally add the meats and cook for five more minutes.
- Try how it goes and if necessary rectify the use of salt or pepper. Decorate your plate with slices of hot pepper.

Chairo is a traditional and well-known soup in the Andean highlands region , such as Puno, Cuzco, Arequipa, Andahuaylas, among others.
Chairo, itself, is a word Quechua What does food mean? Another version says that the name originates from the word chayru What does it mean food .
It is known that his creation of this delicious soup was to meet the needs of peasants, who had a long working day and spent a lot of time away from home.
This thick soup was prepared in order to keep the workers awake after so many hours of work.
