Peruvian Chaque Recipe

I recently tried Chaque on a trip to Arequipa, a beautiful land of amazing landscapes. I not only enjoyed the view which was lovely; but also the kitchen left me with unforgettable flavors, the stuffed Rocoto, Shrimp soup , the Single , among others, were part of my list to be able to bring the magic to Lima and prepare them at home. Let's go with the recipe!

How to Prepare Chaque

Peruvian Recipe of Chaque

It is a dish with high nutritional properties apart from being delicious, the variety of meats and variety of ingredients make this dish very well. Arequipa typical dish . One of the first steps is to have everything ready in advance, there are supplies which we have to give more than a day or an hour since the process is not instantaneous.

  • 1/2 cup of wheat
  • 1/2 kg of beef
  • 1/2 kg lamb tripe
  • 1/2 kg cooked pork belly
  • 1/4 jerky
  • 2 chopped onions
  • 1/2 teaspoon ground garlic
  • 1 tablespoon panca chili
  • 4 boiled and pressed potatoes
  • 4 soaked and crushed chuños
  • 1/4 corn cooked and shelled
  • 1/2 cup green beans
  • 1 cup of pumpkin in medium cubes
  • 4 cabbage leaves
  • 1 tablespoon chopped coriander
  • 1 tablespoon minced mint
  • 1 tablespoon white vinegar
  • Dried oregano
  • Oil
  • Salt and cumin to taste


  1. Pour two liters of salted water into a pot. When it starts to boil, add the beef, the lamb tripe and the cecina. Cook them over medium heat until they feel soft.
  2. When all the meats are ready, remove them and cut them into pieces each. Medium pieces. Reserve the broth.
  3. Heat oil in a pot, brown the onion, garlic and finally the panca pepper for a few minutes.
  4. Add to the broth that has remained, the potato, the chuño, the corn, the wheat, the broad beans and the pumpkin. Season it with salt, pepper, oregano and cumin. Cook this over low heat for 20 minutes.
  5. Add the meats, the cabbage leaves, cook this for 6 more minutes.
  6. Brown the pork belly and reserve it.
  7. In a bowl add the turnip greens, coriander and mint. Season it with salt, pepper and vinegar.
  8. Serve the chaque, that is, the broth with the meat and its concentrate and place the pork rinds on top.

Additional information

Its name comes from the word Chaque in Quechua it means break into small pieces. In the year 1816 the first cookbooks of Peruvian gastronomy were published and it is there where his name appears for the first time.

Arequipa is recognized for its particular cuisine . It has a rich and diverse gastronomy. It is a tradition one day a week to prepare this famous dish.
