Ingredients

For the wonton

  • 200 grams of ground meat
  • 200 grams of minced chicken leg
  • 1 tablespoon corn starch or chuño
  • 1 teaspoon minced ginger
  • 1/2 teaspoon sesame oil
  • 1 teaspoon minced Chinese onion
  • 1 egg
  • 3 cups vegetable oil
  • 36 sheets of wonton pasta
  • Salt and pepper to taste

For the sauce and saltado

  • 3 tablespoons of ketchup
  • 2 tablespoons white vinegar
  • 1 teaspoon minced ginger
  • 1 teaspoon soy sauce
  • Sesame oil
  • Sugar to taste
  • 1 cup of water
  • 200 grams of chicken breast
  • 150 grams of cha siu
  • 150 grams of prawns
  • 1 cup of holantao
  • 1 teaspoon soy sauce
  • 100 grams of pineapple in pieces
  • 1 red bell pepper
  • 1 teaspoon minced garlic

Method

  1. To begin the filling, place the finely chopped pork and skinless chicken leg meat in a large bowl.
  2. Add the minced ginger, the minced Chinese onion (green part), the toasted sesame oil, the white of 1 egg, the corn starch or chuño, salt and pepper to taste. Mix everything very well.
  3. Then fill the wonton dough and give it the respective shape. You should get approximately 30 wontons.
  4. Once you have prepared all the units, fry them in plenty of hot oil over medium heat until they are golden and crispy. Accompany them with the sauce when serving them.
  5. For the sauce and saltado, heat a saucepan and add ketchup, crushed ginger, white vinegar, 1 cup of water and sugar to taste. Let cook until it breaks boil.
  6. On the other hand, dissolve the corn starch in a little water. Slowly add it to the saucepan. Mix and wait until you get the desired texture. Add a few drops of sesame oil and 1 teaspoon of soy sauce.
  7. In another container place the chicken chopped into pieces, soy sauce and Chinese cinnamon. Mix and reserve. Take them to a pan and fry them. Sauté and reserve.
  8. In the same pan, add the garlic and ginger. Add the holantao, the cha siu in slices, the prawns, the chicken in pieces, the pineapple, the paprika in strips, the tamarind sauce and a few drops of sesame. It incorporates everything very well.
  9. Bathe the wontons with the sauté and sprinkle a few toasted sesame seed beads.
