Ingredients

For the mass:

  • 150 grams of unsalted butter
  • 3 raw eggs
  • 1 1/2 cups of white sugar
  • 2 1/2 cups of prepared flour (rising)
  • 2 large sweet table oranges
  • 2 cups of orange juice
  • 2 teaspoons baking powder (yeast)
  • 1 cup chocolate tablet of 130 grams

For the syrup:

  • 1/2 cup of white sugar
  • 1/4 cup orange juice

For the chocolate coating:

  • 1 tablet of milk chocolate of 150 grams
  • 150 grams of milk cream
  • 50 grams of unsalted butter

  1. Wash and dry the 2 oranges well, then with the finer part of the grater, grate the skin taking care not to reach the white layer below, reserve in a bowl.
  2. Melt the chocolate in a bain-marie: place a medium saucepan half full of water on the stove and let it heat up. Before it comes to a boil, place a saucepan inside the saucepan and pour in the chocolate bar, once it has melted. completely, turn off the burner and let stand.
  3. Add the baking powder to the flour and sift about 3 times and reserve near your work table.

Preparation of the syrup

  1. In a small saucepan place the sugar with the orange juice and heat until the sugar melts. Keep it close to the fire so it stays warm.

  1. Using the bain-marie technique, melt the milk chocolate tablet, when it is almost all melted, add the milk cream and butter.
  2. With the stove over medium heat and always in a bain-marie, with a spatula or hand mixers, mix the ingredients well until there are no lumps and the chocolate is thick. Turn off the burner and let it rest.

Arming of the Keke

  1. After 35 minutes check that the cake is ready, when you prick it with the stick it should come out dry, otherwise we leave another 5 more minutes.
  2. Remove the keke from the oven and without removing it from the mold, prick several times with the stick all over the surface until almost reaching the bottom. Then bathe it completely with all the syrup and let it rest for about 15 minutes to absorb.
  3. Then unmold the cake, place it on a grid or fountain and cover the entire surface with the chocolate (you can collect the chocolate that falls and keep it frozen for another occasion, you reuse it by dissolving it in a bain-marie).
  4. Finally you can decorate with strips of candied orange and maraschino, let stand until the chocolate is dry before serving.
