  • 1 cup of alverjas (peas)
  • 3 tablespoons lemon juice

  • Salt and pepper to taste

  • 1 egg
  • 6 pitted black olives

Method

  1. In a pot, cook the chicken with a little salt, when it is ready, drain the water well and shred it in a bowl.
  2. In another pot, cook the carrots, beets, peas and the whole egg (with shell). Remove the vegetables as they cook. Dice each into small cubes and add to the chicken bowl.
  3. Once everything is ready, add the lemon juice and mayonnaise to the bowl, mix well and season with salt and pepper to taste.
  4. Now, cut the avocados in half, remove the pit and peel each one. Fill each half with the chicken and vegetable mixture in the hole left by the pit, forming a mountain with the filling, if you like you can cover the entire surface of the avocado.
