The Christmas Baked Turkey in Peru is the main dish of many tables in Peruvian homes during Christmas.

Ingredients

For the filling:

  • 2 large red onions, diced
  • 10 garlic cloves, minced or minced preferably
  • 200 g of minced pork
  • 2 and a half cups of bacon
  • 100 g of ham
  • 200 g of beef
  • 100 ml of red wine
  • 100 g of almonds
  • 100 g of dried plums
  • 100 g dried apricots
  • 2 and a half cups chopped parsley
  • 3 eggs
  • 6 slices of crustless sliced ​​bread
  • Salt and pepper to taste

For the Turkey:

  • 1 whole turkey of 7 kg about
  • 100 g chicken or turkey liver
  • 50 g panca chili
  • 20 g of mustard
  • 50 g of yellow chili
  • 100 g ground garlic
  • Juice of 1 lemon
  • 1 tablespoon of honey
  • 100 g of all the following herbs: oregano, rosemary and thyme
  • 1 cup of orange juice
  • 1/2 cup of white wine
  • Salt and white pepper

Method

For the filling:

  1. We are going to prepare the filling for the Turkey in the oven. Heat a pan with a little oil and add the onion, garlic and fry for a minute to brown but not burn. Then add the pork and mix.
  2. Before the pork is completely fried add the two and a half cups of bacon, the ham and the beef. Fry everything well and mix. When everything is fried add the red wine, the parsley, the almonds, the cherries, the apricots, mix it and reserve it.
  3. In a bowl or container, beat 3 eggs and add 6 slices of crustless bread. Mix everything until you get a dough, add salt and pepper. Then add the meat preparation, mix well and stuff the turkey.

For the Turkey:

  1. In a bowl place the liver, crush it and mix it with the panca pepper, yellow pepper and mustard until you get a paste. Then with this paste smear the turkey all over the outside.
  2. In another bowl mix the other ingredients: ground garlic, lemon, mustard, touch of honey, oregano, rosemary, thyme, orange juice, white wine, salt, white pepper. Once you have everything mixed, also smear the turkey, but be very careful not to remove the first layer of the liver paste and peppers.
  3. Let the turkey rest for 3 or 4 hours with the preparation.
  4. After the time has elapsed. Heat the oven to 200 degrees and when you put the turkey in, lower it to 180. More or less it is half an hour per kilo of turkey. That is to say for a turkey as in our example of 7 kg. It would be 3 and a half hours. Of course it all depends on the type of oven and how strong it is. So you have to pay close attention so it doesn't burn. It is very important so that the turkey does not remain dry that you spray it with your own juices every 15 minutes.
  5. You can accompany the turkey with mashed potatoes or apple or if you prefer with a delicious Russian Salad.

Tips and tricks

  • For the Baked Turkey to better absorb the ingredients, I recommend that you leave it in salted water for at least two hours before adding the first layer of liver paste. Then, apply the two preparations and if possible do not prepare it the same day, but leave it ready the night before.
  • Now, so that the turkey is not too dry, squeeze two oranges and with a syringe inject the juice into the breast and thighs of the turkey. She tries to spread all the juice throughout the turkey.
