The preparation of Chicken Broaster at home is quick and simple, in addition to the chicken that is the base, the other ingredients are on hand in our kitchens, such as: flour, mustard, salt and oil. The most important thing is to season well the mixture that will be the crispy layer and fry in abundant oil.

  • 10 pieces of chicken with skin preferably legs or thighs
  • 2 cups of wheat flour without preparing
  • 1 cup of evaporated milk
  • 5 tablespoons chuño or cornstarch
  • 1 tablespoon of seasoning
  • 1 teaspoon ground or powdered garlic
  • 1 teaspoon of mustard
  • 1 egg
  • Salt and pepper to taste
  • vegetable oil as needed


  1. Wash the chicken pieces and season with a little salt. Place the pieces in a shallow pot and add enough water to cover them halfway. Cover the pot and let them cook in their juices, almost steaming, for about 10 minutes.
  2. Once the chicken is ready, drain the broth and leave in a container while we prepare the breading.
  3. Place 1 cup of flour in a container and mix with the chuño, garlic and seasoning. Booking. Mix the egg with the mustard and milk in a bowl, beat well with a fork until they are blended, season with salt and pepper to taste. Next, add the dry ingredients little by little and, with the help of a fork, beat until you obtain a thick mixture without lumps. Here you can rectify the salt.
  4. Once the breading mixture is ready, submerge and soak the chicken pieces well, they should be completely covered with the mixture. Place the container in the refrigerator and let them sit for at least an hour.
  5. Mix in a bag or container 1 cup of flour, seasoning, salt and pepper to taste.
  6. Put enough vegetable oil in a tall skillet, preferably wok style, and heat it on the burner until it is hot enough for frying (about a couple of minutes).
  7. While the oil is heating, remove the chicken from the refrigerator and carefully remove the pieces one by one, avoiding losing the layer of breading that has already stuck to them.
  8. When the oil is ready, soak each piece of chicken in the seasoned flour and fry until golden brown, turning on both sides to make it even.
  9. Place the pieces on paper towels or napkins to absorb excess oil.

Tips and tricks

  • With everything ready, you can serve the Chicken Broaster pieces on a platter with the fries and salad in a salad bowl or two-piece portions on individual plates with your side.
