Ingredients

  • 400 grams of chicken chopped into pieces
  • 2 onions cut into julienne strips
  • 2 red tomatoes julienned
  • 1 kilo of caiguas
  • 1 kilo of white potatoes
  • 4 tablespoons red vinegar
  • 1 tablespoon ajinomoto
  • 1 pinch pepper and cumin
  • 1 tablespoon ground garlic
  • Oil
  • Salt to taste

Method

  1. Wash and cut four hundred grams into pieces (sticks). In a pot, pre-cook the chicken for fifteen minutes (do not throw away the broth).
  2. Wash and peel the caigua, cut into medium and thin pieces.
  3. Cut and peel a kilo of white potatoes in cane cut (for French fries), let soak for ten minutes and drain.
  4. Then, fry the potatoes in a pan with oil for a few minutes and reserve in a bowl.
  5. In a bowl, season the chicken pieces with a tablespoon of ground garlic, a pinch of pepper and cumin, two tablespoons of red vinegar, a teaspoon of ajinomoto and salt to taste. Let stand for approximately ten minutes.
  6. In a good size pan, add oil and the seasoned chicken pieces. Let fry and sauté for a few minutes until golden brown. Next, add two julienned onions, a kilo of caiguas, two julienned red tomatoes, two tablespoons of red vinegar, 2 tablespoons of chicken broth and sauté for a few more minutes.
