  • 6 hen or chicken pieces
  • 1 kilo of beef, part breast
  • 1 kilo of beef, part tenderloin, without fat or skin
  • 1 leek cut into pieces
  • 2 sticks of celery
  • 1 large carrot, diced
  • 2 teaspoons oregano
  • 8 slices of sliced ​​bread or 6 French loaves
  • 1 bay leaf
  • 3 teaspoons minced garlic
  • 2 medium onions chopped
  • 2 tablespoons ground yellow pepper
  • 2 tomatoes, peeled and diced
  • 2 tablespoons of oil
  • 250 grams of fresh cheese cut into cubes
  • 3 medium potatoes cut into cubes.
  • 2 cups fresh or diluted evaporated milk
  • 200 grams olives
  • 4 boiled eggs
  • Salt and pepper to taste
  • 5 sprigs of chopped parsley


  1. Wash the meat well and place it in a large pot with 5 liters of water, the leek in pieces, the celery stalks, the carrot, a little salt, half the oregano and the bay leaf.
  2. As soon as it breaks the boil, lower the heat and cook the meats until they are tender, if you use chicken it will be approximately 2 hours.
  3. Once the meats are ready, remove them, cut the beef and pork into medium pieces. Strain the broth and reserve.
  4. Soak the bread in half the milk and a little broth for about 5 minutes, then blend it.
  5. Bring the pot back to the heat, add the oil, prepare a dressing with the garlic, onion, ground chili and tomato. Season with salt and pepper, brown until a paste forms.
  6. Add the blended bread and cook stirring constantly until it is incorporated into the dressing and thickens.
  7. Now, add the rest of the broth, let it boil for about 10 minutes, add the potatoes and meat, cook for about 15 more minutes. Finally add the milk and cheese, let it cook for about 5 minutes and turn off the heat.

Tips and tricks
