Peruvian Tallarines Rojos con Pollo o Carne Recipe

  • 1 package of 500 grams of thick or thin noodles, depending on taste
  • 5 medium ripe tomatoes
  • 3 medium red onions
  • 3 medium carrots
  • 8 pieces of chicken or 1/2 kilo of ground beef, pork or mixed
  • 3 tablespoons ground garlic
  • 5 tablespoons of ají colorado ají panca
  • Salt and pepper
  • Cumin
  • Mushroom and laurel


  1. If you decide to do it with chicken, then season the chicken pieces with salt, pepper, cumin, red pepper (2 tablespoons) and ground garlic (2 tablespoons) and let stand.
  2. If instead you decide to do it with ground meat, then season the meat with salt, pepper, ground garlic (2 tablespoons), red chili (2 tablespoons) and cumin.
  3. While the chicken or meat rests, take the opportunity to grate the carrot. Also blend the onions and tomatoes separately.
  4. Then heat a frying pan and fry the chicken or meat over medium heat until the chicken is golden brown or the meat has lost all the water.
  5. After frying, remove the meats, add the blended onion and if necessary. add a splash of oil. Fry the onion moving it so it doesn't burn and add a tablespoon of ground garlic and the remaining 3 tablespoons of red chili. Fry everything for a few minutes until it reduces and is ready.
  6. Then add the blended tomatoes and fry. A little salt, pepper and cumin, check the flavor to your liking but be careful not to burn yourself. Let cook for 4 or 5 more minutes.
  7. Now add the grated carrots and cook over medium heat.
  8. Meanwhile, in a pot place water, salt and a splash of oil to cook the noodles. When the water begins to boil, place the noodles and cook them according to the instructions so that they are al dente or more cooked according to your preference.
  9. Make sure the sauce doesn't burn, add the chicken or meat pieces and lower the heat and if it's too thick, add a little water. Now add the bay leaves and mushrooms. Cook for 10 more minutes and if it is too dry add a little water and oil.
  10. When the noodles are ready, remove the water, add a splash of oil and mix with a little of the sauce so that it takes on a little color. Taste and if necessary correct the salt. Next, place some noodles, the sauce and the chicken or meat on top.
