Ingredients

FOR THE PASSION FRUIT CREAM AND SAUCE:

  • 1.5 cups of passion fruit pulp (packaging 6 units of large size passion fruit
  • 3 jars of condensed milk
  • 8 egg yolks
  • 2 units of passion fruit large size
  • 1/2 cup of white sugar

FOR THE MASS:

  • 2 1/2 cups of prepared flour
  • 6 egg yolks
  • 1/2 cup of white sugar
  • 150 grams of unsalted butter
  • 1/2 teaspoon vanilla essence
  • 1/4 teaspoon of fine salt

Method

LET'S START WITH THE FILLING CREAM:

  1. If you did not get passion fruit pulp already ready, prepare a thick juice by doing the following: with a spoon, scoop out the contents of the 6 passion fruit and bring them to a boil, while still hot, use a sieve to extract as much juice as possible into a container. Discard the seeds.
  2. In a bowl, add the condensed milk and while stirring, add the passion fruit (pulp or juice) continuously in the form of a thread. When the milk is completely united with the passion fruit, add the egg yolks and mix well. Reserve this preparation until the dough is ready.

NOW WE ARE GOING TO PREPARE THE DOUGH:

  1. In a bowl, beat the butter until soft, add the sifted flour with the sugar and salt, the egg yolks and the vanilla, mix with your fingers without kneading, form a ball with the dough, cover the bowl with a cloth and refrigerate for 15 minutes.
  2. Meanwhile, heat the oven to 350°F (180°C) and grease the pan with butter.
  3. After 15 minutes, remove the dough from the refrigerator, stretch with a rolling pin until it is half a centimeter thick. Cover the entire mold with the dough, cover with parchment paper and bake for 20 minutes until cooked but not browned.
  4. Once the base is cooked, remove from the oven and lower the temperature to 130°C (280°F), add the filling and bake again for 20 minutes. Remove from oven and let cool while you make the topping.

PASSION FRUIT SAUCE:

  1. Extract the pulp of the 2 passion fruit, strain to separate the seeds and discard half of them.
  2. Place the passion fruit juice and half of the seeds in a pot, add the sugar, cook over medium heat until it forms a syrup. Let cool.

Attention
