Sometimes chocolate cakes for many people turn out to be very sweet, even heavy. Happily it is not my case because I love sweets like many of you for sure. But with the black forest cake I think there is no loss, the fruits and the whipped cream make this cake a lighter combination.

  • 370 g of flour
  • 300 g sugar
  • 220 ml of water
  • 100 g of butter
  • 150 ml of milk
  • 125 ml of oil
  • 225 g bitter couverture
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon vanilla extract
  • 3 eggs

For the filling

  • 1 1/2 whipped cream
  • 1 can of cherries in syrup
  • 1 1/2 pisco
  • 150 g bitter couverture
  • 1 pot of strawberry jelly


  1. Turn on the stove and in a pot add the water, oil, milk and butter. Stir the combination so the heat melts the butter. Next, in a blender pour the chantilly cream to start beating.
  2. While this is heating, separate the cherry and syrup from the can. Next, remove the seeds from the cherries and chop the cherries into two or three parts.
  3. Mix the cherries with the strawberry jelly. While the syrup you have in a separate container add two tablespoons of liquor, it can be pisco or a cherry liqueur.
  4. In the preparation of the pot, when the butter is already melted. Add the bitter coverage and move until it is dissolved.
  5. Pour the flour, baking soda, baking powder into the mixture. Beat this and add the whole eggs, sugar and vanilla.
  6. Pour the content into your floured mold and spread with butter. It is recommended that you put a parchment paper since the dough is moist. That way it won't stick. Then place the dough in the oven preheated to 165° for 1 hour and 20 minutes.
  7. Remove the cake from the oven and divide it horizontally into three parts.
  8. At the base of the cake, spread a little of the syrup with liquor that we have already combined and add a layer of whipped cream and the cherry jelly on top.
  9. Bring the other layer of sponge cake and repeat the same process, cover with the last sponge cake and cover the entire cake with the chantilly cream. Scrape the bitter chocolate into a bowl and set it aside.
  10. When you have the whole cake with chantilly cream, use the grated bitter chocolate to cover it and you can decorate it using a bag filled with chantilly cream to make the pompoms. Use whole cherries for the garnish.
